Finally it's weekend... But only for some of you, some people still have to work... just like me! I am working the whole week and the whole weekend at Luxembourg's Spring fair at 'Luxexpo' , so if you are from Luxembourg or if you are staying here in Luxembourg at the moment, come and have a look!
And how could you enjoy spring better than with an awesome an spring-ish breakfast?
Here are some breakfast-variations that will definitely make you feel the spring!
Let's start with a healthy dessert.
What you need:
- 1 Orange
- 1 Apple
- 1 Kiwi
Directions:
- Slice your fruits and enjoy
Here a lovely and clean lunch.
What you need:
- Quinoa
- Salmon
- Green beans
- veggi-bouillon
Directions:
- Boil your quinoa in the veggie bouillon for about 20 minutes
- Cook separately the beans and the salmon filet in a pan, with a little bit of olive oil
- After 20 minutes, filter out the quinoa from the bouillon
- Finito!
A very easy -strawberry oat variation.
What you need:
- 500 gr strawberries
- ice
- oats
- green tea, or any kind of tea you like
- oranges
Directions:
- First of all, press some orange juice. As much as you want your smoothie to be fluid
- Add the Orange juice, 2/3 of the strawberries, and the ice in a blender and mix them
- While your smoothie is blended, slice the rest strawberries for your oats.
- Prepare your favorite tea
- Add the tea to the oats and decorate them with your sliced strawberries
- Take out the smoothie from the blender and fill it in a glass
- There you go!
A healthy afternoon-snack made of Goji-berries, raspberries and strawberries.
The fishy-breakfast
The only thing you need are strawberries and whole-wheat toast. You can actually spread your toast with everything you like. I took homemade cantaloupe-mango-jam.
My favorite breakfast! Protein pancakes with Goji-berries and Raspberries. You can get the protein-pancake mix HERE
Another Oat variation. This time again with strawberries but I also added some dark-chocolate chips to them! Very yummy!
And again oats, made with tea, oats strawberries and raspberries, and to make it even more delicious, I put some chocolate-nut-mus on the top of one strawberry.

I have done nikki sharp's detox, which is also vegan, for 5 days, it's not that difficult as you may think and you will definitely feel better afterwards!
